Cherry Crumble

Ingredients
2 Tablespoons cornstarch -
2 Tablespoons Lemon Juice -
3 Pounds Cherries - sweet, pitted
1 Cup Flour -
1 Cup Brown Sugar - packed
1 Tablespoon Almonds - finely chopped, toasted
1/4 Teaspoon Cinnamon -
1/8 Teaspoon Salt -
7 Tablespoons Butter - chilled, cut into small pieces

Instructions
Step 1. Prep pan
Preheat oven to 400-degrees.

Place a 9-inch cast-iron skillet on preheated overn; heat 5 minutes.  Remove pan from oven, and lightly coat with cooking spray.
Step 2. Prep cherries
Combine cornstarch, juice, dash of salt, and cherries in a large bowl, tossing well to coat.  Pour cherry mixture into prepared pan.
Step 3. Prep crumble
Combine flour and next 4 ingredients (through 1/8 tsp. salt) in a medium bowl; cut in butter with a pastry blender until mixture resembles coarse meal.  Sprinkle flour mixture over cherries.  Place skillet on a jelly-roll pan.  Bake at 400 for 35 minutes or until filling is think and bubbly and topping is browned.  Remove from oven; let stand 20 minutes.  Serving size: about 2/3 cup.
