Beef Tamale Bake

Ingredients
1 1/2 Pound Elk - ground
1 Unit Onions - medium, diced
2 Cups Tomatoes - stewed
1 Can Tomato Sauce - small
2 Cups Corn - whole
1 Unit Salt -
1 Unit Pepper -
1 Unit Chili Powder -
1 Unit Garlic - clove, minced
1/4 Cup Pepper - green, diced
1 1/2 Cup Milk -
1/2 Cup Cornmeal -
2 Tablespoons Butter -
1 Teaspoon Salt -
1/2 Cup Egg substitute -
1/2 Cup Cheddar Cheese -

Instructions
Step 1. Prepare filling

Brown elk and onion.  Add everything else and cook 20 minutes.  Pour into greased 8 x 12-inch baking dish.

(For extra spice I add red pepper flakes and a little sprinkle of chipotle powder.)

Step 2. Prepare Topping and finish

Prehaet over 350 degrees. 

For topping, mix milk, cornmeal, butter and salt.  Cook until thick, stirring constantly to avoid lumps.  Add eggs and chees, mix well and pour over meat mixture.

Bake until top is bowned for 45 minutes to 1 hour.
