Sausage, Spinach and White Bean Ragout

Ingredients
1 Pound Italian Sausage - elk
1 Unit Onions - chopped
2 Units Potatoes - cubed
1/3 Cup Wine - white
2 Tablespoons Garlic - minced
1 Can Cannellini Beans - rinsed and drained
2 Cups Broth - chicken
1/2 Unit Spinach - package
1 Teaspoon Rosemary -
2 Tablespoons Red Pepper Flakes -
2 Tablespoons Parmesan Cheese - grated

Instructions
Step 1. Prepare dish

Heat a large nonstick skillet over medium-high heat.  Coat pan with cooking spray.  Add Italian sausage and onion to pan, and cook for 4 minutes or until sausage browns, stirring to crumble.  Drain sausage mixture well, return to pan.  Stir in potatoes, wine, garlic, beans, and chicken broth; bring to a simmer.  Cover and cook 7 minutes.  Stir in spinach, red pepper flakes and rosemary, and cook for 4 minutes or until spinach wilts, stirring occassionally.  Ladle into bowls and sprinkle with cheese.
