Mix a pinch od sugar into the warm water and sprinkle the yeast on top. Wait for 10 minutes or until it gets foamy.
While yeast gets foamy, combine flour and salt, then add olive oil and yeast mixture. Knead for 6-8 minutes until the dough is smooth and elastic (may need to add a bit of flour if too sticky). Pour a small amount of olive oil in a bowl, and roll dough in the oil. Leave the dough in the bowl, place in a warm spot and cover. Let dough rest for 20-30 minutes. Divide dough into portions when ready to bake. Makes 2 pizzas. Note: This dough freezes really well, just wrap tightly in plastic wrap and put in freezer. Take out of freezer 30 mins before ready to prep pizza.
